 Currently undergoing something of a revival, sherry, or dry sherry to be precise, is finally shrugging off its staid mantle. The lightest style, Manzanilla, can be treated just like a white wine and drunk with or without food, but is at its most appetising with a plate of fresh shellfish. Dry Amontillados and Olorosos are more warming, winter drinks, and make great accompaniments to soup. But the best way to learn how to drink them is to visit Jerez or Sanlúcar, both of which are an easy day trip from Seville, Ronda or Gibraltar.
