Aligoté, Burgundy's no.2 white grape, was traditionally mixed with Cassis to make Kir. Masterful Paul Jacqueson, however, ages his on its lees in barrel to make a rich, appley white which is far too good for such treatment!

Paul Jacqueson's 11 hectares are split between red and white Rully, with a small bit of Mercurey over the hill in Bouzeron. He is a precise and thorough man who thinks his wine-making through carefully, and is held in high esteem by his peers in the nearby Côte d'Or. The domaine is recognised as one of the finest of the Côte Chalonnaise.
