Hand-harvested grapes and low yields, this is the world's oldest sparkling wine. Peach, pear and soft white fruits, floral too. Then dry, with touches of smoke and toast, more fruit and good finish. An excellent Champagne substitute.

Domaine Rives Blanques is a thirty hectare estate situated between Carcassonne and Limoux in the Languedoc. The vines grow at an altitude of 750 metres within sight of the snow-capped Pyrenees, after which the domaine takes its name. Chardonnay, Chenin Blanc and the local Mauzac are the specialities; indeed Limoux is the only AOC Chenin in the South of France. Owners Jan and Caryl Panman are noted for their environmentally-friendly growing practices as well as the number of awards won by their wines.
