Made by Haridimos Hatzidakis from Assyrtico, a local grape, on the volcanic island of Santorini. His first vintage was bottled in 1997, and he has a fine reputation. Crisp and dry with grapey aromas and mineral complexity.

The winery was set up in the demarcated land on the island of Santorini. Haridimos Hatzidikis set out to produce organic wines and bottled his first production in 1997. He uses local grape varieties and old buildings on site for aging his wines which are very high quality and individual.
