A marvellously intense and individual wine with a deep black colour, opulent and rich palate with flavours of liquorice and figs but has bite and balance. Toro Albalá are the finest exponents of barrel-aged pure PX.

This estate is based 50km south of Córdoba at Aguilar de la Frontera, north-east of sherry country. They have 37 hectares of Pedro Ximénez, a variety supposedly bought to Spain from Northern Europe by a Flemish soldier called Pedro Ximénez. Planted in Jerez where it is used mostly for blending and sweetening wines it comes into its own in Montilla particularly in the hands of Antonio Sánchez, Toro Albalá’s winemaker for over 50 years. The company was founded in 1844 but moved to its current site, an old power station in 1922. The oldest wines are still labelled ‘Eléctrico’. Wine making is traditional and ageing is for many years in old barrels which are released onto the market when Antonio sees fit.
