Bollinger is a quality minded, family owned house based in Ay. Unusually they ferment their wines in barrels rather than in vats, producing an especially dry champagne which has been a long time favourite of the British. Founded in 1829 its is currently headed by Christian de Montgolfier, great nephew of the legendary Madame Bollinger. Sticking to its traditional methods, the house produces uncompromising quality. 70% of the grapes, an unusually high proportion in champagne, come from their own 144 hectares of vineyards located primarily in the Grands and Premier crus. The majority of these are planted with Pinot Noir which dominates the blends and gives Bollinger's unmistakable full character. Lengthy aging is at the core of Bollinger's philosophy and the equivalent of five years' production lies in their cellars at Ay to ensure the continuity of Bollinger's style.
