The legendary name comes from the now-ruined Macallan church at Craigellachie. Small stills give a creamy, oily richness. Honey, sherry and butterscotch, then sweetish and full with ginger and smoky notes. Aged in sherry casks.

Built in 1824 it was bought by Roderick Kemp who sold his share in his Skye distillery, Talisker, to buy Macallan. His descendant, Allan Shiach, is the present chairman. All of the whiskies are aged in Sherry casks, which are leased to producers in Jerez for 4 years use prior to sending them to Scotland.
