Cabernet Sauvignon
Cabernet Sauvignon is one of the Noble grape varieties and the major constituent of many of the world’s most sought after First Growth Clarets. Traditionally it is blended with other varieties such as Merlot and Cabernet Franc, but these days it is equally seen as a single varietal wine from all over the New World. It is by far the most planted quality vine variety in the world. It can be difficult to site as it doesn’t tolerate drought very well, yet it is prone to produce wines with green herbaceous flavours if it doesn’t get enough sun. In the right hands and from the right site, however, it produces some of the most complex wines in the world.
