Ice Wine
Ice Wine, or Eiswein in Germanic countries may or may not be affected by Botrytis, but is created when the frozen grapes are picked in sub-zero conditions and then pressed frozen so that the juice is highly concentrated in fruit sugars and their balancing acids. The quantities rendered from this process are tiny, hence the high price for such wines. The work of yeasts is also difficult in such high sugar levels, so alcohol levels are usually very low. The flavours in these wines are very intense, they offer up a superb bouquet and are very clean in the finish.
