Tawny Port
Once Port has been made and the young wine produced, you have basically two options for its maturation. Put into bottle after 18 months, the wine will mature very slowly for years – your quintessential Vintage Port. However, left in cask the oxygen gets to work more quickly, softening and changing the wine to a tawny brown colour, making the flavour much more nutty and spicy, and very intense. Depending on the quality of the initial grapes, Tawnies are sold as 10 year old, 20 year old and so on, with this being the average age of the wine in the bottle. Older than 25 years however, and the wine is fully mature and changes little.
