Amontillado Sherry

Created when the flor dies off a butt of Fino, this is a dry style, which takes a mid-brown hue as it oxidises. Many people believe it to be medium in taste – this is wrong although many Amontillados are sweetened up to make an ‘off-dry’ wine. Typically it is older, and many are marked viejo if they have had a long time in the solera. The name actually means ‘like a Montilla’ which were the browner wines of old that you found on the market, made from darker PX grapes than the white Palomino of Jerez.
