Fino Sherry
What makes dry Fino sherries so light in colour and elegant in flavour? It’s the flor, a white yeasty crust that develops naturally on the wine when it’s in butt, and protects it from oxidising. Flor is a living organism that feeds off the sherry, grows more or less according to the temperature, and can be killed by too much alcohol. The result is the most beautiful wine, full of finesse and character, which looks like a white wine and is only 15% alcohol. A wonderful food wine too, perfect to match with Spain’s renowned tapas. Manzanilla, from Sanlúcar de Barrameda on the sea, grows flor all the year round, so tends to be even lighter and drier in style.
