Oloroso Sherry
When the initial still wine is made from the Palomino grape, it is put in barrel. Some barrels develop flor, a creamy yeast layer that protects the wine from oxidation, and these wines become Finos. Those barrels that don’t develop it become the dark brown, oxidised Olorosos. They are all dry – the base wine was fully fermented after all, and to prevent any flor materialising, the butts are fortified to at least 17.5%, using grape brandy. Olorosos need time to develop intensity, a deep concentration of walnutty flavours, and the best are spectacular, pungent wines of great power, prestige and value. Olorosos are often sweetened to make Creams.
