Palo Cortado Sherry
An intriguing sherry, which should be darker like an Oloroso, but stubbornly, remains a very light brown with a much lighter flavour, despite being exposed to the air. The delicacy, the finesse of the wine comes through on the palate, but the key is a fantastic length of flavour that goes on and on. Palo Cortado works very well with food, from grilled shellfish to a chunky bit of fish and even meats, which is why it is highly prized in Andalucia.
