The ‘other’ grape of Jerez (as opposed to Palomino), and the mainstay of neighbouring Montilla, is Pedro Ximénez or PX for short. It is picked very late and used principally as a blending sweetener to create Creams; in fact it is difficult to ferment, like any good sweet wine, because of the high sugar levels. However, occasionally you can produce enough to make a dark, molasses-and-treacle wine that is fortified and aged in barrel for a long time. The flavour is sweet, luscious and reminiscent of Christmas pudding!
