Vincent Dauvissat is a quiet, quizzical man, but behind this deceptive façade lies perhaps the keenest mind in Chablis, maintaining his family estate at the very pinnacle of Chablis production. Farming 12 ha of vines, including almost three hectares of grand crus, he believes strongly that it is the endeavours in the vineyard that produce the best wines.
The vineyards are ploughed and the domaine is, to all intents, organic but Vincent doesn’t have the paperwork. I’m not a militant person, he says, I just work well in the vines: that, simply, is Chablis! When not in his vines, Vincent is to be found attacking the rolling landscape of the region on his racing bike! In recent years he has been joined by his daughter Etiennette and son Ghislain Dauvissat, so succession is assured. The lasting impression of any visit chez Dauvissat is the plethora of little barrels, many the traditional small 114 litre feuillette barrels, although the wines are not at all marked by oak because the average age of these barrels is 10 years. With any oaky flavours long since leached out, the purpose of these barrels is to allow the wines to repose on their lees, but Vincent does not practise bâtonnage, the method of stirring up the lees as favoured by so many of his neighbours. In bottle, Dauvissat wines are classic Chablis which cellar well. As a footnote, Dauvissat-Camus wines are 100% the same as those labelled as ‘Vincent Dauvissat’.
Lying Abroad/En Primeur/In Bond Wines
Wines offered ‘Lying Abroad’ or ‘En Primeur’ provide a good way to secure some of the most sought after wines at opening prices. In addition we ensure it is the cheapest way to buy favourite mid-priced wines from Bordeaux, Burgundy and the Rhône, so please ask us for our offers or check our website for latest reports. Prices are clearly marked in our sales literature and are exclusive of duty, shipping, marine insurance and VAT. Shipment of claret and Port normally takes place around 30 months after the vintage, burgundy and Rhône usually more quickly. A second invoice for the duty, shipping, marine insurance and VAT on the value of the wine is charged at time of shipment. At today’s rates these are approximately £2.95 plus VAT per bottle for wines and £3.75 plus VAT for Port. There are no further charges for deliveries to a UK mainland home or work address. Your Lying Abroad purchases are covered under The Bunch Code of Practice which can be sent on request or viewed here.
