A rare style that occurs when the wine stops making ‘flor’ and natural oxidation happens slowly with the colour remaining quite light. Always dry, a good Palo Cortado has brilliant finesse and elegance, yet has tremendous length. A cut stick or Palo Cortado is the symbol used to mark the casks.
