Cream sherry is a lovely balanced drink, much maligned as the tipple of grandmothers and reverends! A good cream sherry should have depth and plenty of dried fruit character to go well with a slice of cake. It deserves once again a much wider audience. Pale Cream is made by combining a dry Fino with sweet, grapey Moscatel. Sweet but fresh, it is a reflection of the sherry blender’s art! Made from Muscat of Alexandria, younger versions of Moscatel are wonderfully grapey in aroma and sweet on the palate while older ones go very dark with age, almost treacly in character with an intense sweetness. Pedro Ximénez originates in Montilla and is invariably best when part-fermented to allow natural sweetness to be retained. The dried fruit, fig and walnut flavours get more intense as the PX is barrel-aged in a solera. It is a perfect partner for vanilla ice cream.
