Domaine des Fines Caillottes - J Pabiot

At the end of the 19th century Louis Pabiot was a winemaker in the area of Les Loges farming just over 1 ha of vines. Around 1910 his son Gaston began work here and slowly started to grow the area; by the 1950s the domaine had grown to 3 ha.

In 1944 Gaston's son, Jean (Pabiot) started to work in the vineyards at the tender age of 14 years, and by 1978 when his son Alain started work there were 7 ha which has grown, under Alain's tenure, to 29 ha. In 2004 Alain was joined by his son Jérôme. Domaine des Fines Caillottes, Jean Pabiot et Fils, is a small producer with scattered parcels of vineyards on the various soils typical of the region including the very pebbly clay limestone, the classic flint, some parcels of Kimmeridgian clay and a richer plot of clay and limestone. In 2012 they enrolled with Terra Vitis, a certified responsible vineyard and winery practice award, which they have taken to the next level being awarded the state run HVE High Environmental Value award in 2019 for biodiversity in the vineyards and reducing chemical interventions. Their 19th century underground cellars, located beneath their house, were originally eight small cellars but over the years they have been knocked together and extended under the street in order for the Pabiots to incorporate modern, temperature controlled, stainless steel vats.
