This wine is still to be bottled and as such the advertised ABV may be subject to change on its eventual arrival and inspection into the U.K.

With 20% fermented in barrel and the remaining 80% in stainless steel, the Tonnerre gives up alluring notes of stone fruit, a little white peach and a hint of aniseed. On the palate it possesses delicious creamy mouthfeel, with prominent leesy weight and texture but bright, zingy acidity. A superbly balanced wine, whilst delicious now, will need further cellar time to really show its class. 5-15 years.

"This has some exotic peach and pear character as well as crystalline citrus fruit, with a nice liquid mineral character. Fine, fresh and detailed with nice purity and harmony. It’s ripe but it stays really balanced." 94/100 (Jamie Goode).

Domaine Samuel Billaud

Samuel Billaud is part of an historic Chablisian family, he worked for the family firm until breaking out on his own in 2009. Now based in the heart of the village of Chablis in his 13th century cellars he crafts exquisite wines which are vinified and aged in vats and oak barrels for between 12 and 18 months depending on the appellation. The vineyards have an average age of 40 years and are all on the regions classic Kimmeridgian clay/limestone marls so perfectly suited to Chardonnay. He buys in grapes from trusted grower with whom he has worked for many years forming trusted partnerships, as well has having some vineyards of his own. All the farming is organic in principle with sustainability at its heart. He ferments some wines in 450L barrels aiming to bring complexity to the wines while expressing the terroir of each vineyard, as well as ageing other wines in much larger vessels to emphasise their minerality. Spoken of in the same breath as the elite of Chablis Samuel is very much a grower on the up.
