Château Pas du Cerf

The history of Pas du Cerf as a wine producing estate starts in 1848 when the Gualtieri family first planted vines producing wine for their own consumption. Eight generations on, the vineyard comprises 80 hectares set surrounded middle of a 700-hectare forest between Toulon and St-Tropez with views running down to the sea. Sisters Aurore, Diane and Marion run the estate with great respect for the bio-diversity around them with no chemical products being used. Organic conversion began in 2010 and now the entire estate is certified as well as achieving HVE3 status. The vines are in a valley which runs down to the Mediterranean and so are protected from heavy rainfall while benefitting from the maritime influence which moderates the climate and helps slow down the ripening on the south facing vineyards so producing fresher, more complex flavours. Eleven different varieties are grown out of the 13 permitted for Provence, Grenache, Cinsault and Syrah being the main ones. The soil is mainly schist and the resulting wines have good mineral characteristics. The winery is largely underground and each vat is temperature controlled to enable the lively, aromatic style of wine, mostly rosé, to be produced, although red and white are also produced.
