Another Mediterranean variety, white, which has surprisingly good acidity that lets it age well. It makes a straw yellow dry white that has apple and pear flavours or can be very good in a sweet, more oxidised fashion as you find on the Greek island, Santorini, in particular. Sweet examples are a much darker golden brown.
