This estate can trace its lineage back to 1520 when it was founded by Jehan Carillon. Today, it is run by Jacques and Sylvia Carillon, a husband and wife team who farm 5 ha of vineyards in and around the village of Puligny-Montrachet. Jacques is the winemaker, constantly in the vineyard or in the cellar and Sylvia deals with all commerce aspects and accounting. This has been the set up since the split of the original Domaine Louis Carillon estate, with brother François going his own way with Domaine François Carillon in 2009, and Jacques’ first vintage made in 2010. They are low interventionists, believing their role in the vineyard is to nurture and coax their vines, rather than control them – acquiring HVE certification has been a natural progression for them.
The winemaking is traditional with 12 to 18 hours of settling post-press, before fermentation in oak barrels, both alcoholic and malolactic. The resulting wine is then aged for around 12 months on fine lees. They are keen for the terroir of their wines to show through so new oak is kept to around 20 to 25%, even for their Grand Crus.
