The wines of Domaine de la Chauvinières are from stony granite soils about 30cm deep on a fractured granite sub-soil. These fissures in the rock allow the roots of the vine to penetrate the ground. The winemaking is traditional including some skin contact and ageing on lees. A portion of the wines are aged in wooden barrels and vats on fine lees without stirring to add complexity to the final wines. The top wines from this estate such as Granit are from a plot of 65 year old vines and the wine is aged for three years before bottling. Jérémie has recently built a new dedicated winery/warehouse and shop on the outskirts of the village.
