Palomino

The sherry grape that, away from the scalded white soils of Andalucia, produces very dull fare but in Jerez transforms ordinary whites into wines of beauty and character. Olorosos, Finos and Manzanillas all require Palomino as their base wine which then transforms through the sherry process into a magnificent fortified creation.
