Lemon & Tarragon Grilled Chicken

Ingredients

For the Chicken:

4 boneless, skinless chicken breasts (or thighs)
2 tbsp olive oil
Zest & juice of 1 lemon
2 garlic cloves, minced
2 tbsp fresh tarragon, chopped (or 2 tsp dried)
1 tsp Dijon mustard (optional, for depth)
¾ tsp salt
½ tsp black pepper

For Serving

Garnish with extra chopped tarragon and lemon wedges

Instructions:

Marinate the Chicken:

  1. In a bowl or zip-top bag, mix together the olive oil, lemon zest, lemon juice, garlic, tarragon, mustard (if using), salt, and pepper.
  2. Add the chicken and coat well.
  3. Marinate in the fridge for 30 minutes to 2 hours (or overnight for stronger flavour)

Grill the Chicken:

  1. Heat your grill (or grill pan) to medium-high and lightly oil
  2. Remove the chicken from the marinade and shake off excess. Keep excess marinade to brush over chicken.
  3. Grill for 5–6 minutes per side, or until juices run clear.
  4. Brush chicken with remaining marinade during cooking for extra flavour

Rest, Serve & Enjoy:

  1. Let chicken rest for 5 minutes before slicing.
  2. Garnish with extra chopped tarragon and lemon wedges.
  3. Serve with seasonal salad and warm crusty bread.
