Instructions:
Marinate the Chicken:
- In a bowl or zip-top bag, mix together the olive oil, lemon zest, lemon juice, garlic, tarragon, mustard (if using), salt, and pepper.
- Add the chicken and coat well.
- Marinate in the fridge for 30 minutes to 2 hours (or overnight for stronger flavour)
Grill the Chicken:
- Heat your grill (or grill pan) to medium-high and lightly oil
- Remove the chicken from the marinade and shake off excess. Keep excess marinade to brush over chicken.
- Grill for 5–6 minutes per side, or until juices run clear.
- Brush chicken with remaining marinade during cooking for extra flavour
Rest, Serve & Enjoy:
- Let chicken rest for 5 minutes before slicing.
- Garnish with extra chopped tarragon and lemon wedges.
- Serve with seasonal salad and warm crusty bread.
