Muscadet

Properly called Melon (de Bourgogne), the classic accompaniment to seafood along the shores of Brittany is light, crisp and relatively neutral in flavour, allowing the shellfish to sing. Often made sur lie (on the lees) to get a little more complexity in the wine, and there are developments afoot to age it much longer where grown on granite soils – the results are almost Burgundian.
